Faux Lasagna

I thought long and hard about the title of this post. Perfect, right? : )
If you're ever in a pinch, try this. It's fast and delicious!
A funny little tip I learned from my SIL, Layne, a long time ago: Put grease from cooking ground beef in a metal can, put it in the freezer, when it's full , throw out as a solid. Thanks Layne.
Simply cook noodles. Then layer meat sauce , noodles, cottage cheese, and two cheeses. Cover with foil and cook @ 350 for 45 minutes- an hour. Let sit at least 15 minutes, uncovered, before cutting.
Guess where this dinner went that night? Remember this story? Well, after a long and challenging pregnancy, Ally, (my new little neighbor), finally made it safely here.
The sweet gals at church provided two more meals to Ally's family last week.
Welcome to the world, Ally. Your brother and sisters are so happy you're here safe and sound. And of course your mommy and daddy!

That baby is beautiful! And I'm so glad to see you use cottage cheese! I also do, since it seems easier and cheaper to me. So many people freak when they see cottage cheese in my recipe, though! It's great though! And yours looks better cause you use those other cheeses as well. Yum!

Yum, it looks delicious!! I use cottage cheese in mine anyway because I don't like the taste of ricotta. Wonderful tip about the grease, oh my goodness, that would be so much easier!!! Thank you!!!

Ally is so adorable! Nothing sweeter than a brand new baby. I'm glad she made it safely into the world.

That lasagna recipe sounds really and good. I have an easy one that you don't even cook the noodles....they soften as it bakes.

My mom used to make that lasagna, only our recipe was called "Lazy Day Lasagna"... I think I shall make it, I remembering loving it as a kid!

That is always how we made lasagna. And we also put our grease in a can in the freezer. Seeing that you gave the food to a neighbor reminded me of when I was a kid. Whenever my mom made something really wonderful it was always going to some other family at church.
